Vegetarian, Vegan and Organic Paella

Owners Josh and Nerissa describe their food truck serving authentic Spanish paella as a gypsy hangout for people “looking for unique.”
With over 10 years of experience in the hospitality industry, it was a decision to back a “random once-off idea”18 months ago that eventuated to Boho Blends.
Josh and Nerissa love the food truck lifestyle of being around other great food, music, and always interesting and friendly people.
A highlight was being a part of a private event at Carl Cox’s (British DJ and producer) house, with just his closest friends.
The journey hasn’t been without some challenges though, with Josh recalling a particularly salty incident.
“One of the early gigs I asked my brother to help season a dish because I had my hands on other pans. Basically I gave the wrong measurement of salt when he asked in a quick stressful encounter.”
“He put in the salt which destroyed the whole pan immediately as it was at least 5 times too salty. Oops!”
Despite incidents like this, Josh and Nerissa say they love carnivals, and are famous for their tasty mixed classic paella with san jose chorizo, chicken breast, prawns and roasted capsicum.
