Californian Korean BBQ
From humble beginnings slinging tacos from a BBQ in the heart of Geelong, CALIKO BBQ have evolved into a fully-fledged food truck, serving up a tasty mix of Californian/Korean street food.
LA Street Tacos are at the core of the menu. Taking quick seared, sweet and smokey marinated kbbq meats, CALIKO fill fluffy grilled soft corn tortillas high, loading up on the kimchi, fresh handmade salsas, killer sauces and a refreshing hit of just squeezed lime juice. A year on the road has seen the menu expand, adding monster burritos, kimchi quesadillas, Korean fried chicken and ever changing specials.
Owner & chef Nathan Zammit has always been drawn to the flavours of South East Asia.
“Meats and seafood being grilled over coal, punchy fresh green herbs, searing heat from ground chillies and the fresh sour hit from just cut limes... I was always told by my Asian chef mates that I was born in the wrong place.”
“The best-selling item on the menu is easily our Korean BBQ Burrito. We take a lightly toasted flour tortilla, throw on some smokey bacon and kimchi fried rice then load it up with k-bbq meats, fresh pico de gallo salsa, more kimchi (of course!) shredded monterey jack cheese, sesame lime mayo and crisp cos lettuce leaves. That burrito started life as a special about a year ago and now we cant take it off the menu.”
“I think what sets us apart from other Food Trucks is the transparency of the food we are preparing and serving. We've got a massive mirror set above our service line so customers can see exactly how we work. We also like our customers to pick and choose what goes into their Burritos, Tacos & Rice Bowls, so the menu was designed in a way that everything can be altered to suit individual tastes.”
